Junk Food (convenience) Vs Healthy Food (cost)

There are too many choices of fast food and junk food today. We are at a loss for what the right choices are to make in order feed ourselves and our families. Many times, and unfortunately, convenience wins out. The cost is not always in the actual food being purchased at the time it is what happens our health in the future. I often hear how expensive healthy and organic food is and there is truth in that statement. However, considering the health cost of eating poorly, proper nutrition is a bargain! Many junk foods are linked to a number of diseases - obesity,diabetes, heart disease as well as a number of cancers. When you factor in the cost, both monetarily and the way you feel, there is little doubt healthy eating is the logical choice. There are many ways to eat healthy but it does take some time and planning. I hope to cover this in a future blog. Since there is so much abundance in fresh whole food at our local farmers markets making a big salad for dinner is the best way to try some or all of the best the summer has to offer. Make sure you add some protein whether it be grilled chicken, shrimp, or steak. You can go all vegetarian as well and add beans or/and avocados…… add all the proteins if you choose. Try different types of lettuce and add radishes, a variety of peppers, cucumbers, tomatoes etc. The list is endless and that is the best part of summer! Finish it off with my all time favorite balsamic vinaigrette ….. Balsamic Vinaigrette

3 TBSP balsamic vinegar

1 TBSP dijon mustard

1 garlic clove

1/2 cup avocado oil or your oil of choice

salt and pepper to taste Mix balsamic, mustard, and garlic (I always use extra garlic) together in a bowl. Slowly whisk in oil to blend. Season with salt and pepper. As long as you are taking the time to make 1 recipe why not triple the recipe? Then it will be easy to make a salad anytime and have a very healthy dressing.
